Homemade fermented vegan mayo

After going zerowaste lifestyle, I started making my own mayo. It’s very hard to find plastic & addictive free mayo here.However, it’s very easy to make homemade mayo.

I’m making Japanese style ‘fermented’ vegan mayo. You need only 2 ingredients.I’m not vegan, but I love this recipe.If you have blender, it’s ready in just few seconds and tastes better than traditional mayo. It’s also healthier than traditional ones.

Yes! We Japanese love fermented foods very much. We have many kinds of fermented foods recipes. Fermentation not only preserve foods but also add nutritional value. Fermented foods have long been a main part of the daily diet in Japan.

– plant based Oil 100 ml ( your favorite one!)
-Soy yogurt 5 tbs (Check my homemade yogurt recipe
– salt & pepper

It’s important all the ingredients are at the room temperature.

-Place soy yogurt, salt & pepper in the blender, and blend for about a few seconds.
-Add the oil gradually and blend
-Mayo is ready! Salt to taste.
(If you want, you can add lemon juice or mastard, too )

I can store it in the fridge for 3-4 weeks.

I use this sesame oil. It is naturally pressed oil without using any chemicals.There is no color or smell.
